Ancestral 25.2 resided in the Grand Chai, otherwise known as the "Founder's Cellar", Delamain's first cellar, which dates back to the 18th century. A living, breathing, south-exposed space, whose impactful seasonal temperature variations play an important role in the evolution of the casks quietly maturing here across decades This cask is truly exceptional, distinguished by its chestnut hoops-a signature of the era when Delamain had its own cooperage. One of the oldest still resting in the cellars, it is a rare testament to that time. Chosen by Alain Braastad, father of the current Cellar Master, it was lost to time in a secluded corner, near a wall that absorbs the humidity from the underground cellar below.
After decades of the angel's share, where volume, color and strength are shaped solely by time, only 180 bottles of Ancestral 25.2 are crafted from this Rare Cask.
TASTING NOTES
AROMAS: Candied fruit, especially dried apricot, mingling with spices like nutmeg and cloves and a hint of autumnal forest floor.
TASTE: Rich apricot, creamy vanilla and cacao, with a layer of walnut and deep rancio and a dash of aniseed freshness.
STYLE: Powerful, rounded and full; with an incredibly long finish; a stunning example of the heights (elegance and lengths) achievable with an extremely old Grande Champagne cognac.
