The cognac was aged in a seasoned 350L oak cask made with French oak from the Tronçais forest. The use of old, seasoned oak reduces the influence of tannins and allows the flavours of the vines and the terroir to saturate the cognac. The resulting cognac exhibits remarkable authenticity and elegance.
Over time, this cognac quietly evolved within its cask in one of our smallest cellars.Emblematic of Delamain's history and heritage, the cellar was formerly part of the Priory. Its historic 13th century vaulted cellar continues to house an ancient Charentais pot still. Besides its unique history, this cellar has the perfect conditions for aging our single vineyard cognacs. Two narrow south-facing church windows allow just enough sunlight to filter through. The thick, rough-hewn walls of local limestone contribute ideal levels of moisture and moderate the temperature.
TASTING NOTES
This cognac reveals vanilla and fruity flavours on the nose.
Aromas of ripe cherry, muscat grapes, quince, and figs, are elevated with spices and soft leather.
On the palate, it marries natural sweetness and rancio; its roundness is embellished with slightly woody and peppery notes.
