This limited-release version of High West Rendezvous Whiskey is a sumptuous marriage of rye whiskeys finished in port wine barrels. A top-secret ratio of whiskeys, it never is chill-filtered, and the blend is aged in charred American white oak barrels prior to finishing in tawny and ruby port wine barrels. This process gives this blended whiskey uncompromising aroma and flavor, with the rye forming a beautiful base of vanilla, caramel, and cinnamon, while the port barrels provide notes of plum, dried fruit, and spice. With its aromas of muddled blackberries, honey-poached figs, chocolate-covered cherries, toasted marshmallow, gentian root, star anise, hoisin sauce, and well-worn leather, this port finished whiskey's nose evokes feelings of being wrapped up in a warm blanket by the fire on a crisp evening. Like a proper holiday plum pudding, this aged whiskey is brimming with flavors of plums, blackberries, spiced bitter orange peel, toffee cookies with orange tea, fresh dates, cinnamon strudel, brown sugar, and dried thyme leaves.
