Our fifth release has been matured predominantly in first-fill, sherry-seasoned European oak casks – including Pedro Ximénez casks – plus refill casks, ex-bourbon casks and a small quantity of first-fill, sherry- seasoned American oak casks. Bottled straight from the cask, without the addition of water to reduce alcohol content, our Cask Strength Series marries the traditional craft of whisky making with a modern approach to flavour exploration.
Cask Strength Release No. 5 opens with complex and spicy aromas of dried cloves, fresh oregano, crushed pine needles and lingering wood smoke. Deliciously intense flavours of sun-dried fruits follow – prunes, dates and sultanas – reflecting the influence of the Pedro Ximénez casks, while the first-fill European oak casks provide aromatic hints of liquorice and winter spices balanced by cocoa nibs and light oak from the ex-bourbon casks. A delightfully fragrant and smoky finish lingers on notes of sherried fruits and sweet spices.
