Our process starts by hand-selecting barrels to create a base blend and then dividing it into proprietary ratios. One finishing vessel gets imparted with toasted American oak that derives its enhanced sweetness from heating the inside of the barrel to caramelize the natural sugars in the wood. The other is finished with Toasted French Oak that brings out subtle flavors and a silkier texture which is more akin to wine aging. Once each component has the desired amount of oak character, the two are blended together once again to create an innovative and rich flavor profile.
